Hey, didn't you say saliva? It's a nest! >:c Hear me out. Yes indeed, this is a bird's nest, specifically, a swiftlet's nest. Swiftlets have a special gland that secretes a sticky saliva. They use this to build their nests, as it dries up to cement-like strength. ... isn't it dirty..? YES! that is exactly why its expensive! The nest is full of twigs, bird's droppings, and worst of all.. FEATHERS! Small, tiny, fine feathers that took ages to clean. No pain no gain.. :'D We soak the hardened nest in room temperature water overnight to loosen up the nest, and remove big impurities. Then.. we use tweezers to meticulously separate the nest from its feathers, and other impurities. Only then, can we boil and prepare it into a soup.
